About a year ago I had a massive flare-up of my Hashimoto's Thyroiditis, an autoimmune condition where my immune system seeks to destroy my thyroid gland. I was diagnosed with Hashimoto's when I was around 12 years old and things had been well controlled for many years until a series of intensely stressful events over the course of a 5 year period triggered an increase in my thyroid antibodies. After working closely with my naturopathic doctor and implementing a number of strategies that I learned about in my schooling for holistic nutrition, things weren't shifting in the direction I needed them to in order to feel back to my regular, energetic self. In July 2017, after my yearly blood test results came in, it turned out that my antibodies were the highest they had ever been and I needed to make the final BIG change that I had been putting off for almost a year. From 2013 to 2017, I followed a full plant-based (vegan) diet. As I did my research into the best healing diet for Hashimoto's and other autoimmune conditions, it became apparent to me that my elimination of all animal proteins was not serving my body well. I knew deep down that the transition back into eating animal proteins was needed, but I wasn't quite ready to take the plunge. But that changed instantly when I received my blood work results in July 2017. I knew that it was now time to make the shift and immediately started adhering to the Autoimmune Paleo Diet. This meant not only the reintroduction of meat into my diet, but also the removal of certain foods that are known to worsen inflammation in those who suffer from autoimmune conditions. One of those foods is grains, so that meant no more bread. Or so I thought. Turns out you don't need grains to make delicious and satisfying bread! Through some experimentation with some recipes that I have found, I discovered a wonderful solution for the days when I want to fulfill my love of avocado toast. Enter Grain-Free Flax Bread. This bread is a serious game-changer for anyone who is living the grain-free life. Not only does it give you the "feel" of eating grain-based bread, it also packs a nutritional punch. The flax and egg combination provide anti-inflammatory Omega 3 fatty acids, as well as a nice serving of protein (8g per slice!), and a heaping dose of dietary fiber which is something we all need to be ensuring we get enough of each day. If you choose to use organic, free-run eggs, then you'll also be giving yourself a healthy dose of healthy cholesterol, vitamins A, B12, D and E, as well as choline and selenium (a critical antioxidant for thyroid health). I quite enjoy this bread on its own with a little bit of coconut oil on top. But it is extra delicious with some cashew cream cheese or toasted with some avocado, sliced tomato and sprouts on top. This bread also toasts well so almond butter and jam toast for breakfast is also an option! It's a real winner if I do say so myself.
